Tomato and Mozzarella Pizza Toast

Homemade, fresh, simple and delicious!

Large crusty roll | white or wholemeal

Tomato puree | 142g

Tomatoes | 4 - chopped + extra for topping

Oil | 2 tbsp.

Sugar | 1 tsp

Salt | ¼ tsp

Black pepper | ½ tsp

Garlic powder | ½ tsp

Onion powder | ½ tsp

All-purpose seasoning | ½ tsp

Chilli flakes | ¼ tsp - optional

Dried thyme | ¼ tsp

Dried oregano | ¼ tsp

Dried basil | ¼ tsp

Mozzarella | sliced

Fresh basil leaves


Cut the crusty roll in half horizontally and place the bottom half on a lined baking tray. Bake in a preheated oven at 180°c/gas mark 4 for 3 minutes or until lightly toasted.

In a blender, add the chopped tomatoes, tomato puree, oil, sugar, salt, black pepper, garlic powder, onion powder, all-purpose seasoning, chilli flakes, dried thyme, oregano and basil. Blend all the ingredients together until completely pureed. If needed, add additional seasonings and adjust to taste.

Using the back of a spoon, pour and spread the blended tomato sauce generously on the toasted base. Top the pizza with sliced tomatoes and mozzarella and bake for roughly 10 minutes or until the cheese has melted.

Remove from the oven and serve garnished with dried and fresh basil leaves.
