Stuffed Bell Peppers

Bell peppers | 3 - sliced in half
Eggs | 6 eggs
Spring onions | 3 - chopped
Fresh basil | handful - chopped
Sliced ham | a few slices - chopped (or your favourite sliced meat e.g. chicken)
Cooked bacon | chopped
Chilli flakes | (optional)
Preheat the oven at 180°c/gas mark 4. Slice peppers long ways from top to bottom to form a shallow cup. Grease a baking tray with oil spray or butter. Place the peppers on the baking tray and fill each pepper cup with chopped bacon, ham, spring onion and basil. Crack an egg into each pepper cup and season with salt and pepper.
Put the pepper cups into the oven for roughly about 20 - 25 minutes depending on how soft or how firm you like your yolks. Top bell peppers cups with chilli flakes and chopped spring onions. Serve immediately and enjoy!
