Total time: [80 mins]
Ingredients:
Lamb chops | 550 g
Onion/spring onions | 1 onion - chopped or 3 spring onions - chopped
Garlic | 2 cloves - chopped
Ginger | ½ tsp - chopped
Bell pepper | ½ - sliced
Fresh thyme | 2 sprigs
Fresh rosemary | 2 sprigs
All-purpose seasoning | 1 tbsp.
Schwartz rosemary & garlic lamb seasoning | ½ tbsp.
Salt | 1 tsp
Paprika | 1 tsp
Black pepper | ½ tsp
Chilli flakes | ½ tsp (optional)
Oil | 1 tbsp.
Directions:
Wash the lamb chops and place into a large bowl, (be sure to remove any unwanted fat). To the bowl, add the chopped garlic and ginger, chopped onions/spring onions, bell pepper, fresh thyme and fresh rosemary. Add the all-purpose seasoning, lamb seasoning, paprika, salt, pepper, chilli flakes and oil. Gently massage all the ingredients into the lamb chops, making sure that all pieces are evenly coated. Marinate this in the refrigerator for a minimum of 4 hours or preferably overnight.
In a large pan, heat cooking oil over a medium heat until hot. Add the lamb chops into the frying pan and sear each side for roughly 5 minutes. Place the seared lamb chops onto a lined baking tray and bake in a preheated oven at 200°/gas mark 6 degrees for 20 - 25 minutes.
For extra colour and texture, set the oven to grill and grill the lamb chops for further 5 minutes. Remove from the grill and serve the lamb chops accompanied with some seasoned new potatoes or your favourite side dish!
Enjoy!
