King Prawn Fried Rice

Easy, delicious homemade king prawn fried rice! Who needs take-away?

Ingredients:

Raw king prawns | 165 g

Salt | ¼ tsp

Black pepper | ¼ tsp

Frozen veg | 100 g

Eggs | 4 - beaten

Spring onions | 3 - chopped

Rice | 500 g - cooked and cooled

Light soy sauce | 2 tbsp.

Sesame oil | 1 ½ tsp

Dark soy sauce | ½ tsp

Oil


Directions:

In a medium bowl, add in the raw prawns and season well with salt and pepper. Set the prawns aside and leave to marinate for about 10 minutes.


In a large pan, heat cooking oil over a medium - high heat until hot. Add the seasoned prawns and fry for roughly 3 - 4 minutes or until pink, making sure to turn frequently as they cook very quickly. Remove the cooked prawns from the pan and set aside.


Add a little oil if you need to; then pour in the beaten eggs. For large chunks of egg, let the egg sit in the pan for about 20 seconds before scrambling it. Once the eggs are ready, remove them from the pan and set aside. At this stage you can cook the frozen vegetables either in the pan or in the microwave. Once the vegetables are cooked remove them from the pan and set aside.


Pour in a little more oil, then add the chopped spring onions. Cook the spring onions for roughly 2 - 3 minutes or until tender. Stir in the rice then add, the light soy sauce, sesame oil and dark soy sauce and mix well. Add in the cooked vegetables, prawns and scrambled eggs and combine all the ingredients together. Add a little more light soy sauce to taste, if desired.


Serve immediately and enjoy!
