Granola Muffin Cups

Super quick! Super healthy!

Yield: [8 granola cups]

Banana | 2 ripe - mashed

Almond extract | - 1 tsp

Honey | 5 tbsp.

Cinnamon | 1 tsp

Salt | pinch

Rolled oats | 125 g

Greek yoghurt



Spray oil/butter


Preheat the oven at 190°c/gas mark 5. Grease a muffin tray with spray oil or butter. In a mixing bowl, mix together the mashed banana, honey and almond extract. In a separate bowl, mix together the rolled oats, cinnamon and salt. Combine both mixtures together making sure that everything is evenly combined. Portion the batter into each muffin tray cup and press up the sides using your fingers or a spoon.

Place the muffin tray into the oven for 12 -15 minutes or until golden. After removing from the oven, allow the granola cups to cool before attempting to remove them from muffin tray.

Once cooled, fill the granola cups with Greek yoghurt and top with nuts or berries of your choice.

Serve and enjoy!

Tip!: You can use any fruit, berries or nuts of your choice.
