One Pan All Day Breakfast
Who doesn't love a good old fashioned fry-up?!

Ingredients:
Eggs | 3 eggs
Lean bacon medallions | 3 rashers - cooked
Chicken frankfurters | 2 - chopped
Baked beans | 415 g (1 can)
Mixed baby tomatoes | handful - chopped
Spring onions | 3 - chopped
Basil | handful - chopped
Dried rosemary | ¼ tsp
Chives | handful - chopped
Chilli flakes | ½ tsp
Spray oil
Salt
Black pepper
Directions:
In a large pan, heat cooking oil over a medium heat until hot. Add the chopped spring onions and dried rosemary. Cook for 3 minutes or until tender, stirring frequently. If desired, cook a little longer until edges start to brown. Pour in the baked beans and season well with some salt and pepper. Add in the bacon medallions, chopped frankfurters, mixed baby tomatoes and basil and cook for a further 2 - 3 minutes.
Reduce the heat to a medium - low. Make three wells in the mixture and crack the eggs into them. Cover the pan with a tight lid or plate and leave the eggs to cook uninterrupted until the whites are completely set, cooking time will vary depending on how soft or how firm you like your yolks.
Sprinkle salt, chilli flakes and chopped chives over each egg and garnish with chopped basil leaves. Serve immediately.
