Ham Egg Cups
Delicious low carb breakfast. Great for when you're on the go.

Ingredients:
Sliced ham | 8 slices (You can use any type of sliced meat you fancy e.g. chicken. I used my favourite type of ham - smoked ham)
Eggs | 8 eggs
Cherry tomatoes | handful - grilled
Black pepper
Chilli flakes | (optional)
Oil spray/butter
Directions:
Preheat the oven at 200°c/gas mark 6. Grease a muffin tray with oil spray or butter. Place the sliced ham over the top of each muffin cup and tuck in. Crack an egg in inside each ham cup and season with some black pepper. (You can add salt if you wish, but I find that the ham is salty enough).
Place the muffin tray into the oven for about 15 - 20 minutes. Timings will depend on how soft or how firm you like your yolks. Top the ham egg cups with chilli flakes and serve with grilled cherry tomatoes.
Tip! - Try topping the ham egg cups with grated cheese before putting in the oven.
