Jus-Rol | Ready to roll - Light Puff Pastry Sheet
Philadelphia or any soft white cheese | 160 g
Sugar | 2 tbsp. + extra for coverage
Lemon juice | 1 tsp
Vanilla extract | 2 tsp
Lemon zest | 1 tsp
Eggs | 1 egg
Strawberries | chopped
Icing sugar | optional
Round cookie cutter or a glass
Preheat the oven at 200°c/gas mark 6. 'For best results, remove the Just-Rol pastry sheet out of the fridge approximately 10 minutes before using, this will make it easier to work with.' - Jus-Rol
In a large mixing bowl, add the soft white cheese, sugar, lemon juice, vanilla extract and lemon zest. Combine all the ingredients together until smooth and creamy using a wooden spoon or electric mixer.
Unroll the pastry sheet on to a flat baking tray. Using a large round cookie cutter or a glass, cut out as many circles as will fit on the pastry sheet. Centre a smaller cookie cutter or glass in the middle of each circle and gently press down. Be careful not to press down too hard as we just want an indentation to create a border around the edges.
Gently spread the soft white cheese mixture on each circle, keeping it within the borders. Place the strawberry and blueberry fillings on top of the soft white cheese.
In a small bowl, beat together one egg then using a pastry brush, brush the borders with the egg wash. Sprinkle each border with sugar and bake in the centre of the oven for about 18 - 20 minutes or until golden.
After 20 minutes, remove from the oven and let the pastries cool completely to allow the soft white cheese to set. Sprinkle the pastries with some icing sugar for extra sweetness.
