Cloud Eggs
This impressive dish is much easier than it looks!

Ingredients:
Eggs | 2 large eggs
Salt
Dried chives
Chilli flakes
Spray oil/butter
Directions:
Preheat the oven at 230°c/gas mark 8. Line a baking tray with non-stick baking paper and grease with spray oil or butter.
Separate the egg whites from the egg yolks, place the egg whites in a large clean bowl and yolks in a small bowl. Add a pinch of salt and using a hand whisk or electric mixer, beat the egg whites until you get stiff white peaks. If beating the egg whites by hand this should take approx. 30 minutes of manual mixing. If using an electric mixer, start on low speed and then slowly increasing to a high speed, this should take approx. 3 - 5 minutes.
Spoon 2 mounds of the egg whites onto the prepared baking sheet and indent the centres to form a nest. Place the egg whites in the oven and bake until lightly golden for about 3 minutes. After 3 minutes, remove from the oven, and gently add the egg yolks to the centre of each nest, season with salt and pepper and return to the oven. Cook for a further 3 minutes until yolks are just set. Serve your cloud eggs on a slice of toast and garnish with chilli flakes and dried chives.
Serve immediately and enjoy!
Tip!: Try adding grated cheese to the egg whites after the stiff white peaks are formed.
