Chocolate Orange Muffins
Moist, sweet, chocolatey and fragrant.

Plain flour | 240 g
Unsweetened cocoa powder | 40 g
Baking soda | 1 tsp
Baking powder | ½ tsp
Salt | ½ tsp
Granulated white sugar | 235 g
Milk | 100 ml
Fresh oranges | 1 whole orange - juiced
Honey | 1 tbsp.
Eggs | 2 eggs
Butter | 120 g - melted
Orange zest | 1 whole orange zest
Almonds/pecans | 50 g chopped - optional
Chocolate chips | 50 g - optional
Preheat the oven at 180°c/gas mark 4. In a large bowl, combine together all the dry ingredients (flour, cocoa powder, baking soda, baking powder, salt and sugar). Add the milk, honey, orange juice, eggs, melted butter and orange zest and mix well, try not to overmix. (If you are using an electric blender set speed to low).
Add the chopped almonds or pecans and chocolate chips into the batter and mix well. Fill a muffin tray with muffin cases and spoon in the batter. Fill it up about half way to avoid overflow when rising inside the oven. Bake the muffins for about 15 - 20 minutes. To check if the insides of the muffins are ready, insert a tooth pick into the centre of each muffin, if the toothpick comes out clean then the muffins are ready.
Cool the chocolate orange muffins down on a wire rack for at least 20 minutes before serving.
