Sweet Chilli & Garlic Salmon
Easy salmon recipe with a delicious sweet chilli garlic glaze on top.

Ingredients:
Boneless salmon fillets | 250 g
Salt | ¼ tsp
Black pepper | ½ tsp
All-purpose seasoning | ½ tbsp.
Schwartz lemon & dill fish seasoning | 1 tsp
Chilli powder | ½ tsp (optional)
Parsley | ½ tsp
Oil | 1 tbsp.
Sweet chilli glaze
Ingredients:
Sweet chilli sauce
Garlic | 1 clove - chopped
Ginger | ½ tsp - grated
Black pepper | ¼ tsp
Chilli flakes | ½ tsp
Directions:
Place the salmon fillets in a large bowl, add the salt, black pepper, all-purpose seasoning, fish seasoning, parsley, chilli powder and oil. Gently massage all the ingredients into the salmon fillets, making sure that all pieces are evenly covered. Marinate this in the refrigerator for up to 4 hours.
In a small bowl mix together the sweet chilli sauce, chopped garlic, grated ginger, black pepper and chilli flakes. Using a pastry brush, brush the glaze onto the seasoned salmon making sure that each fillet is well coated. Allow this to sit for about 15 - 20 minutes in the refrigerator to allow the salmon to soak up the marinade.
Place the marinated salmon onto a lined baking tray and bake in a pre-heated oven at 200° degrees/gas mark 6 for 15 - 20 minutes. After 15 - 20 minutes, remove from the oven and set the oven to grill. Pop the salmon back into the oven and grill for 3 - 5 minutes until the skin caramelises giving the salmon a lovely texture and colour.
