Bacon Avocado Toast

Streaky bacon | 4 rashers

Eggs | 2 eggs

Spring onions | 1 - chopped

Avocado | 1 - sliced

Sun-dried tomatoes | handful - chopped

Toast | buttered


Preheat the grill at 200°c/gas mark 6. Lay the streaky bacon rashers on a foiled lined baking tray and grill for about 15 minutes or until the edges of the bacon start to crisp, turning once.

Whilst the bacon is cooking, fill a small saucepan about ¾ of the way full with water, and bring it to a fast boil over a high heat. Reduce the heat until the water is simmering and then add the eggs. For a soft boiled egg (firm whites and a runny yolk), cook for about 5 minutes, (it's very important to keep timings as this will determine how hard the yolks get.) If you prefer a firmer yolk, increase the length of cooking time to suit your preference.

Halve, stone and slice the avocado. Place the avocado slices on the warm buttered toast. Add the crispy bacon and top with the soft boiled egg, add the chopped sun-dried tomatoes and garnish with spring onions.

Serve immediately and enjoy!
